Evolution the same as gravity?

When discussing evolution with "true believers" I have been told many times that evolution is a theory in the same sense that gravity is a theory (as if this gets them off the hook of supporting the evolutionary claims). There are some very basic problems with such an absurd statement:

Every single person on this planet observes gravity every day of their life; on the other hand not one person on this planet has ever observed macro-evolution even once.

Any person who wants to can look back through history and easily discover that the "thoery" of gravity has been in place and remained a daily constant for all of time; however, not even one scientist has ever looked back through history and found a single example macro-evolution at work.

Scientists can use their knowledge of gravity to precisely plot the path of man-made probes to beyond to the edge of our solar system; whereas, no scientist has ever used his knowledge of evolution to create even a single celled organism or explain the 'simple' process of fins developing into front legs.

Good point. The belief (I use the word intentionally) that humans evolved from less-complex life forms is the result of interpreting what little evidence there is (i.e., the "theory" is used to interpret the evidence, not the other way around). Gravity isn't the product of "interpretation."
