Pigging Out On New Year's Eve !

Pigs are...

great! My grandfather used to raise hogs and one of my favorite times of year was the slaughter. That meant ham, sausage, bacon and pork roasts from my grandmother's old iron, wood cook stove. Mmm,Mmm! Coupled with her home made biscuits at breakfast made me think I had died and gone to heaven!

My grandfather would grind one whole hog each year to make sausage and I have never tasted better since. To this day, I prefer any type of pork to beef. In Jamaica, jerked pork is tantamount to a national dish...it is delicious!

I am from Virginia and BBQ there means sliced or ground pork with hot sauce and cole slaw. My uncle used to dig a deep pit each year and heat big, smooth stones in it with a huge fire. He would dig out the ashes..put a layer of wet seaweed in and then a seasoned whole hog with another layer of seaweed on top. He would cover the pit with a canvas tarp, anchor it down with logs and stones and let it cook for about 10 hours. That BBQ would make you hurt yourself gorging out.

My ex has collected pigs in all styles from many different places and they are all over her house.

I have a friend who owns a Vietnamese pot-bellied pig and it is a house pet. That pig is one smart
animal and tons of fun to play with. When it decides it wants to play...it will jump on the couch or chair when you are sitting and nudge you off with its snout...you have no choice...its strength is amazing!

I am loving your cartoons...they are giving me inspiration for my blogs. Even this post on pigs got my memories and writing juices flowing. These comments almost turned into a blog. (;>}
