As to the Great Spaghetti Monster, I'm not sure which episode of Trek you're referring to.
If it's Encounter at Far Point, those creatures have been identified as the Space Jellies, by Michael A. martin, and Andy Mangels, In Book 2 of Star Trek Titan.
That Almost sounds like one of Irwin Allen's monsters. Or maybe something from Ultraman or Johnny Sokko.
