It's cheap debating points to mock something you don't understand. No scientist I know offers "it's evolution, now shut up" as an explanation. Evolution is the starting point, leading to the investigation of which scientific processes gave rise to the matter in discussion. You see, evolution is nothing more than the notion that the features of all living things have a history, and arose according to known, or at least knowable rules.
The issue of whether we have evolved to need coercion is actually two questions. First question, do we need coercion? Second question, if we do, how did that need come about?
Evolution notwithstanding, scientists necessarily believe the world works according to rules, and these rules can be discovered.
