No, we do not "know" that the creation story cannot be possibly true. The Truth is that God created the universe. The facts may be suspect (6 days, Adam and Eve with a snake, etc) but the Truth is known.
Read the first sentences of Genesis, and then consider the Big Bang theory. They do fit together.

There is plenty of empirical evidence that humans continue to exist after we die. You just dismiss that evidence as produced by charlatans and fakery. I have empirical evidence enough to convince me, but to someone like you no evidence will be enough unless it happens to you personnally.
